Ingredients you need
To prepare my pea pancakes you need:
- Frozen peas
- rice flour
- Feta cheese
- cottage cheese
- Lemon peel
- mint
- Eggs
- Frozen peas
- olive oil
Ingredients Notes & Substitutions
- Rice Flour : I like to use rice flour in fritters as it is a light flour with a mild flavor and is GF, which can be useful, but plain flour can also be used. I have also made this recipe with oatmeal, I puree the oatmeal into oat flour before adding the remaining ingredients.
- Feta cheese: The amount of feta cheese used can be changed depending on who this recipe is being prepared for, keep the feta to 50 grams or less as it can contain a lot of salt. If you increase or decrease the feta, you can increase/decrease the cottage cheese so that the total volume of cheese remains the same.
- Cottage cheese: This can be replaced with Greek yogurt. See note above to change quantity based on amount of feta used.
- The Lemon peel and the mint They add flavor to the patties, but are not absolutely necessary. These can be replaced with other fresh herbs such as parsley, spring onions or chives.
- Salt: If it's a baby-led weaning, leave out the salt, if it's for older family members, season to taste.

Step one: Puree all ingredients (except the second batch of peas) in a food processor until smooth
Step two: Add the second scoop of peas and pulse so that pea pieces come through the donut dough. The batter will be quite thick.
Step three: Heat a heavy skillet over medium-low heat and add oil so you have a generous coating on the bottoms of the pan. Let the oil heat up, a good way to test if the oil is at the right temperature to fry your patties is to use a wooden spoon. Insert the end of a wooden spoon into the pan, the oil will be at a good temperature when small bubbles will bubble around the wooden spoon.
Step four: Spoon the mixture into the pan. The mixture is quite thick, so I use a wet spatula to flatten the patties.
Fifth step: Cook until golden brown on both sides

Here's how to make these pea fritters perfectly every time!
- Don't let your pan be too hot, a medium heat is all you need.
- When you flatten your patties with the back of your spatula, wet your spatula as this will prevent the uncooked patty from sticking to it
- These patties taste delicious in a burger or wrap or with my lemon feta dip
